I stumbled upon this blog recently which i think is pretty nifty and fun to explore. It's by a good friend of mine. These are her words...
"I wanted to share with you all a few of my favorite recipes that I pull out all the time! They are super simple and don’t require any crazy ingredients, which is perfect for me since I’m living in an apartment and haven’t stocked up on any out of the box ingredients.
The first recipe is for Spicy Peanut Noodles. These are PERFECT because they are good hot and cold and can last as leftovers for a while. Hellooo to not cooking every night, am I right?
I first tried them when my older sister made them one night and have been obsessed ever since. Even me, the laziest chef in my family, can make them, so you can surely make them too. The recipe is from Classy Vegan. Even if you don’t decide to make these, you should check out her website anyways cause it has some BOMB recipes on there. AND it’s all vegan.

My next recipe is also vegan! Don’t be put off by this if you are anti-vegan because you think it doesn’t taste good or has weird substitutes. I have tasted these recipes out on my family and they were all very skeptical of me at first. However, after trying each of these, they were forced to admit that they actually enjoyed these vegan meals.
Spaghetti squash is great because you can fill those carb-loving pasta cravings without actually eating any carbs! This entire dish is made of vegetables! Below is a recipe that I used to learn how to cook spaghetti squash. I tend to overcook mine a bit on purpose so that it is less crunchy and more like pasta. Of course, that is all up to personal preference.
There are a variety of things to do with spaghetti squash once it is cooked. My personal favorite is to simply add a marinara sauce and shed a little parmesan on top. I have also tried it with pesto sauce, but I wasn’t a big fan of it. On marinara sauce, I have both made my own and used it straight from a bottle. Honestly, it tastes great either way! Getting it straight from the bottle is much easier for you lazy cooks out there, so that might be the way to go!

My final recipe is for Healthy Banana Bread! I LOVE banana bread. It’s great for breakfast or for dessert with a little drizzle of icing. It is also a wonderful gift to make anyone’s day a little brighter J
I found this recipe over the summer and was shocked when I saw it has absolutely ZERO sugar in it. I tried it out and fed it to my friends and family and no one could tell that this was secretly healthy!
Not only is this banana bread healthy, it is also super easy to make. There are no crazy ingredients, pretty much just stuff that most people would have around their kitchen anyways. Even if you don’t consider yourself much of a baker, I promise you that you can make this bread!
